Ingredients chicken nachos recipe:
Potatoes
2-3 large Russet Potatoes
2-tbsp olive oil
kosher salt and season pepper
1tsp onion powder
1 tsp garlic powder
Chicken Seasoning
1 boneless chicken breast, cut into bite sizes pieces
1/2 tsp kosher salt
1 tsp smoke paprika
1 tsp onion powder
1tsp seasoned salt
1 tsp mesquite seasoning
1 tsp garlic powder
1 1/4 cup DivineKuizine Mango Barbecue Sauce
3/4 cup shredded sharp cheddar cheese
1/2 cup chopped fresh cherry tomatoes
1/3 cup diced green onion
sour cream and DivineKuizine Mango Barbecue Sauce for garnish
Instructions
Preheat the oven to 425 degrees F.
Prepare your potatoes by thinly slicing using a mandolin or knife. If using a mandolin, your potatoes will be thinner and cook faster! If using a knife, they will be a bit thicker and may take longer.
In a bowl season potatoes with all spices above.
Spread potatoes across 2 baking sheets and drizzle with a bit of oil,. Bake for 15-20 minutes. This will depend on the thickness of the potatoes! Mine are done by 15 minutes, but it will take longer with thicker cut potatoes. Remove from oven.
Meanwhile, make the chicken on the stovetop. Use about 1-2 tsp oil to cook, 3-5 minutes or until no longer pink. Pour in DivineKuizine Mango Barbecue sauce until nice and adhered to chicken simmer on medium to low heat.
Combine the potatoes onto one sheet pan or cast iron pan, maybe even layering some of the potatoes. Sprinkle with cheese and add the chicken. Return to the oven for another 5 minutes, or until the cheese is melted. Remove from oven.
Garnish with tomatoes, green onions, sour cream, and DivineKuizine Mango Barbecue. Serve hot, immediately!
