Fried Snapper with Cajun Cream Sauce

This rich and creamy Cajun Cream Sauce with Fried Snapper is quick and easy to prepare. This recipe is loaded with FULL of flavor! This sauce is versatile you can use this sauce on pasta, chicken, and seafood




4-6 Servings


Ingredients:

1/2 cup cornmeal mix of your choice

4 eggs ( 2 of them to be egg whites)

1/4 cup of whole milk

6 red snapper fillets

1/4 cup Vegetable Oil


Pour in shallow dish cornmeal. In another shallow bowl crack two whole eggs and two lightly beat the egg whites and add milk whisk eggs and milk altogether.

Dip the fish in the egg milk mixture and then in the cornmeal.

In a large nonstick skillet, warm 1/4 oil over medium high heat. Add the fish and cook until it golden brown on both sides , about 3 to 4 minutes. per side.


Prepare the Cajun sauce

Ingredients:

1 garlic clove, minced

1/3 bell pepper, finely chopped

1 jalapeno , finely chopped

1/3 celery, finely chopped

3 green onion , finely chopped

2 thyme sprigs

1/2 shrimp bouillon cube

teaspoon salt , onion and garlic powder

pinch of red pepper flakes

1 tablespoon Cajun seasoning

1/4 cup clam juice

1/2 cup heavy cream

1 tablespoon butter

1/2 teaspoon smoke paprika

1/2 fresh lemon



In a saute pan add oil and butter over medium high heat add all vegetables and garlic. Sauté vegetables for 2-3 minutes.

Add shrimp bullion and spices, DK sugar spice ,clam juice, heavy cream ,and butter. Mix all spices , vegetable ,cream and clam juice mix well and let simmer on low heat for 25 minutes or until thicken. Once thicken squeeze fresh lemon juice on sauce and mix well . Garnish with parsley. Pour over fried snapper.
