Ingredients:
1 whole chicken, rinsed and patted dry
¼ cup of soften butter
¾ cup olive oil
3 springs of Thyme
2 springs of Rosemary
1 lemon
2 garlic cloves
½ onions chopped into quarters
Salt and Pepper to taste
Directions
Preheat oven 400 degrees
Stuff bird with garlic cloves ,1 lemon cut in half, onion, 2 thyme sprigs, 1 rosemary sprigs, good amount of salt and pepper.
The left over thyme and rosemary strip the leaves off and finely chop it up finely. In a bowl, combine softened butter, rosemary, thyme, olive oil, salt and pepper to taste. Spread the butter oil mixture all over the chicken.
Place Chicken into the oven and roast it for 1 hour 15 minutes or until done, Skin should be golden brown. Let chicken stand for about 10 minutes before carving.
