Homemade Turkey Pot Pie

Turkey Pot Pie is the perfect way to enjoy leftover roast turkey and holiday fixins! A great after holiday meal. Creamy filling loaded with turkey, dressing and veggies is tucked inside a flaky pie crust and baked until golden and bubbly!Turkey pot pie like you have never tasted before. It won't last long.It’s hard to find a more comforting dish than a homemade turkey pot pie. This classic version has a flaky, buttery crust, a creamy sauce, and a turkey, fixins and vegetables. Ingredients:

2 carrots, cut into 1-inch slices

1 cup of leftover dressing-optional

2 tablespoons butter 1 cup leftover gravy

1 1/2 cup leftover turkey

1/2 cup frozen peas

1 cup half and half or whole milk ; whichever you prefer

1 garlic clove

1 teaspoon of fresh thyme and rosemary

1 package refrigerated pie crust or homemade pie crust recipe on my website

1 egg


Preheat over to 400F.


Place the leftover gravy in a saucepan and gradually stir in milk add butter , herbs and salt to pepper to taste. Stirring until bubbly and thickened. Add carrots, dressing place in mixture in little bite size chunks, turkey, and peas incorporate all ingredients well. Remove from heat and set aside while you roll out the pie dough.


Lightly flour surface, use a rolling pin to roll out the dough. Transfer dough to a pie pan. Pat with your fingers, making sure it is smooth. Cut the extra overhanging of dough with a knife and discard. Fill the pie dish with the turkey mixture. Top with pie crust and seal edges with your fingers or fork. With a sharp knife, slice a few small slits in the center of the top of pie crust. Using a pastry brush, brush crust and edges with beaten eggs. and edges with beaten egg.


Bake for 20-30 minutes, or until crust is golden brown. Cool for 10 minutes. cut into slices and serve. Enjoy!!
