Ratatouille one of my Disney favorite movies. Ratatouille is not only beautiful but it is absolutely packed with flavor! It is the perfect dish for vegetarians or vegans. This recipe full of bright, flavorful vegetables and herbs. Enjoy it with your favorite crusty bread! Ratatouille is a simple and flavorful French vegetable stew made with eggplant, zucchini, red peppers, tomatoes, onion, garlic, and herbs. The perfect dish is great for using up your spring/summer garden produce. All of the different flavors come together to create a unique, delicious, and rich dish. We cannot forget the beautiful velvety tomato sauce. Yet a simple tomato sauce made with roasted vegetables and herbs bring this dish all together.

INGREDIENTS
Roasted Tomato Sauce
INGREDIENTS
1 package grape tomatoes sliced (into fours)
4 Campari tomatoes
3-4 mini red peppers
3 tbsp extra virgin olive oil
2 tbsp butter
1-2 tablespoon fig baslmic dressing
1 tsp salt
1 tsp seasoned pepper
1/2 cup basil fresh
1/2 cup fresh oregano
2-3 thyme sprigs
2 cups vegetable stock
salt and pepper to taste
1 whole garlic bulb
olive oil, for drizzling
Instructions
Trim the top ¼ inch off the top of the garlic bulb.
Place the garlic cut-side up on a piece of foil, drizzle with olive oil.
Wrap the garlic in the foil and roast until the cloves are deeply golden brown and tender.
Roasted Tomato Sauce
Instructions
Preheat oven to 425°F.
Spread tomato halves, onions, red peppers on a baking sheet. Drizzle with olive oil, fig, balsamic dressing then sprinkle with salt and pepper.
Roast tomatoes for 30-40 minutes. Remove from oven and set aside.
Add the stock, roasted tomatoes, peppers , butter ,onions, roasted garlic, basil, thyme and oregano into the blender . Blend until well combined and smooth Ratatouille Vegetables
Ratatouille Vegetables
1-2 small eggplant (sliced 1/8 inch thick circles), I used Japanese eggplant
2 small zucchini (sliced 1/8 inch thick circles)
2 small yellow squash
3-4 Campari tomatoes (sliced 1/8 inch thick circles)
salt (to taste)
black pepper (to taste)
Garlic herb oil
1tablespoons garlic paste , minced
olive oil
roughly chopped, fresh parsley, oregano , basil, and thyme
pinch salt and pepper
pinch red pepper flakes
Mix well Loaf on French Bread or crusty bread of your choice
INSTRUCTIONS
Preheat the oven to 425F. In a baking dish pour tomato sauce into dish. Arrange the sliced vegetables in a circular pattern standing upright in the dish over the sauce. Brush with the garlic herb oil. Cover and bake for 30 minutes, then uncover and bake until vegetables are tender. Serve immediately.
Garlic Bread. Spread the garlic herb oil on the bread bake for 10 minutes or until golden bread at 375F.
Serve: Cut bread place ratatouille vegetable and sauce on bread and enjoy!
