Mamas brownie cupcakes with peanut butter frosting

I am not a true baker I am learning how to bake and having fun at it. I made mama's brownies I love chocolate. I just learned how to make buttercream frosting and how to pipe icing on cupcakes. I learned on You Tube!! I am still practicing I am getting pretty good at it. I just have to give all my friends my bake goods and icing. Trying to keep my lady figure!




1 cup sifted flour

3 tbsp sifted unsweetened cocoa powder

1/4 tsp salt

2 sticks unsalted butter

1/4 cup unsweetened chocolate, break into pieces

1/4 cup semi-sweet chocolate, break into pieces

1 1/2 cup sugar

1 tsp vanilla extract

4 large eggs

1/4 powdered sugar


Preheat oven 350F.

Sift together flour, cocoa and salt; set aside.

Combine butter and chocolates in allergen bowl and microwave for about 2 minutes and 15 seconds. Stir until completely smooth. Whisk in sugar, vanilla and eggs one at a time, until incorporated. Then whisk in dry ingredients until smooth.

Use a spoon or pitcher to fill muffin cups nearly to the rim. Bake for 25-30 minutes. Brownie will crack on the surface. Cool in the pan and frost.


Buttercream Peanut Butter Frosting

1 cup creamy peanut butter

1 1/2 cup powdered sugar

6 tbls of butter

2 teaspoons vanilla extract

1 tsp kosher salt

1/3 cup heavy cream

In mixing bowl either your stand mixer or hand held mixer, add peanut butter, powdered sugar, butter, vanilla and salt.

Mix on medium -low speed until creamy, slowly add the heavy cream to mixture beat on high speed until frosting is light and fluffy.
