Ingredients:
Salmon
4 salmon fillets skinless
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
2 tablespoon butter
1/2 teaspoon Tony's Creole seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoke paprika
1/4 teaspoon mesquite seasoning
Plantain Mash
3-4 Yellow plantains ripeness according to your preference, with or without dark spots
2-3 teaspoons salt
1/2 stick butter
1/4 cup Hennessey
1/3 cup heavy whipping cream
Sweet Honey Ginger Glaze
1/3 cup of DivineKuizine sugar spice
pinch cayenne pepper and red pepper flakes
Juice from fresh lime
2 tablespoon butter
In a saucepan combine all ingredients simmer until sugar and butter dissolves.
Make Plantain Mash:
Bring a large saucepan of water to the boil.
Cut the ends off each plantain then cut the plantain in half.
Use a paring knife to slice lengthways across the peel (just to where it meets the flesh).
Remove the peel then repeat with the rest of the plantain.
Carefully add the plantain pieces to the saucepan of hot water.
Reduce the heat to medium/low and leave to simmer until the plantain is tender .
To determine its readiness use a fork to prick the plantain, it should be soft to the touch.
Strain off the excess water.
Mash the plantains with a potato masher or a fork
Once mashed, add your additional ingredients, mash until well combined and smooth.
Instructions:
Pat dry the salmon fillets then season with all seasonings .Heat oil in a large non-stick pan over medium heat. Add them to the hot pan and cook for 1-2 to nice golden brown color. Brush DivineKuizine Mango BBQ sauce to Salmon.
Meanwhile, preheat the oven to 425F , finish cooking salmon about 10 minutes.
Add Sweet Honey Ginger Glaze sauce spooning it all over the salmon.
Assemble:
Place plantain mash on a plate top salmon over the mash and drizzle with sweet ginger honey glaze.
