This inspired Mediterranean Lamb Bowl is easy and healthy. Homemade lamb meatballs, roasted sweet potatoes, cumber salad and can not forget one of the sauces/spreads used DivineKuizine remoulade sauce. The base of the bowl is rice, I spiced up my rice with a little bit of Italian Dressing just gives this bowl another depth of flavor.
What you will Need: Lamb Meatballs
1/2 pound Ground lamb
1-2 fresh garlic cloves
2-3 sprigs of fresh rosemary
2 -3 sprigs of fresh mint
salt and pepper
1/4 cup of olive oil or grapeseed oil
Rest of what you will Need:
1 sweet potato, diced; inch thick
1 cup Jasmine rice
Roast Red Pepper Hummus
Cucumber Salad:
Cucumber, chopped
1-2 Roma tomatoes
salt and pepper
Let's Get Started:
Began by making the Jasmine rice . Make rice recommend cooking it according to the package.
Preheat oven to 425F diced sweet potato into 1 inch thick. Roast the sweet potatoes, Drizzle sweet potatoes, with grapeseed or olive oil and roast in a shallow roasting pan or baking sheet, turning frequently. When the sweet potatoes are soft and golden brown, remove them from the oven. about 25-30 minutes.
To prepare lamb meatballs - Blend all herbs, garlic spices and oil in a blender. You simply mix together ground lamb, Herb blend. Then scoop 1.5-tablespoon portions of the mixture and shape them into round meatballs. Bake at 425F for 30mins 15 on both sides.
Prepare cucumber salad- diced cumbers and tomatoes in a shallow bowl add good amount of salt and pepper, drizzle Ken's Itlatians dressings.
Assemble bowl:
In a bowl, layer Jasmine Rice, then top with lamb meatballs, roasted sweet potatoes, cucumber tomato salad, falafel, red pepper, hummus, tzatzikisauce and DivineKuizine remoulade sauce. Enjoy!
