When it comes to a Sunday dinner, nothing beats a classic as pot roast! Slow cooked dinners n. A complete meal with veggies cooked right along your meat.This is my sister famous pot roast recipe. she always in charge of the pot roast at any family gathering. This recipe will sure to be a crowd pleaser and it is simple and easy to prepare.We always have my sister's roast on Christmas or Easter and our family loves it every time.
Serves 4-6
Ingredients
2 to 3 pounds chuck roast, boneless
Coarse or Kosher salt and freshly ground pepper or seasoned pepper
Olive oil or Canola oil
6 to 8 garlic cloves sliced into halves
1 large onion, peeled and thinly sliced (1 1/2 cups)
4-6 sprigs fresh thyme
Beef Broth 160z
Preheat oven 350F. Poke holes in meat and insert garlic into meat, then season on all sides with salt and pepper (great amount of seasoning on both sides).
Heat pan with oil to barely coat bottom of pot over high heat for 2 minutes. Sear the meat until golden brown, turning to cook all sides evenly, about 8 minutes. Once it is nicely browned all over, remove it from the pot.
Take the slices of onions and place them evenly at the bottom of the roasting pan.(make sure your roasting pan has a lid on top of it. Place the meat on top of the onions and pour the beef broth in the roasting pan. Take the thyme sprigs and pull the thyme leaves off the sprigs and scatter all over the top of the roast. Place roast i n oven for about 3 to 4 hours with lid on. the cook time may vary depending on the size of the roast. Good rule to follow if the roast is 3 pounds it should be done in 3 hours. Start to check your roast the last 30 minutes to see if it is done or needs that last 30 minutes.
Let roast stand for about 20 minutes, then slice to desired thickness. Spoon some sauce over pot roast from the roast juices in roasting pan and serve enjoy with family and friends!
