This is a simple recipe for crispy fried chicken wings. Hot crispy fried chicken is the best when seasoned perfectly chicken is crispy on the outside and tender on the inside, PERFECT for dinner or to bring to a potluck or picnic! Super Crispy Fried Chicken is one of my all-time favorite go-to chicken recipes. You can make this chicken more or less spicy using cayenne pepper or red pepper flakes in the flour.
Ingredients:
2 lb chicken wings
4 cups all-purpose flour
2 tablespoons garlic powder
2 tablespoons onion powder
1 teaspoon Kosher salt
1 teaspoon pepper
1 tablespoon smoked paprika
1 teaspoon Cayenne pepper - optional
1 teaspoon seasoning salt
4 Fresh Thyme Sprigs
Oil for deep-fat frying (canola or peanut oil)
Directions:
Season the chicken with all the spices. Combine the all-purpose flour.
Pour the flour into a large freezer bag, then toss in the seasoned chicken wings.
Shake the bag, until the chicken is well coated with flour.
Remove the chicken from the bag, and shake off any excess flour.
Pour the oil into a large skillet or fryer, and let it heat up over medium heat for about 10 minutes.
Carefully add in the chicken, and fry until golden brown. Typically, chicken should be fried for about 7-8 minutes per side. But keep in mind that pieces can vary in size and thickness. The chicken is fully cooked when the thickest part of the meat registers at 165° and the skin is crispy and dark golden-brown in color.
Place the chicken on a paper towel lined plate or rack.

Roasted Garlic Cauliflower Mash
1 Cauliflower
1 Garlic Bulb
1 teaspoon olive oil
1/2 teaspoon salt and pepper
3 sprigs thyme
1/4 cup of half and half
1/2 cup of chicken broth
Preheat oven to 425F . Slice the top head of garlic and drizzle olive oil over exposed cloves. Wrap garlic in aluminum foil and roast 40-50 minutes. Remove and cool. You can make this a day ahead of time.
Cut cauliflower florets and steam until tender. Transfer cauliflower to blend, add roasted garlic to blender, thyme, half and half , chicken broth salt and pepper. Blend until smooth. If cold heat on stove until warm and serve.
