Fennel is underused. Underrated. And under-appreciated. Period. It’s great in salads, roasted, or even grilled! It adds a peppery, anise flavor!
Roasting draws out the natural sugars and echoes the flavors. This combo of fennel, turkey sausage, and red potatoes roasted with nothing but garlic, olive oil, fresh rosemary, and a bit of salt and pepper! This is a dish great for brunch and special occasions.
Serves 6-8
4-6 red potato peeled and cut in 1 inch cubes
1/3 cup of chopped red pepper
1 /3 cup of chopped fennel about 1 inch thick
1 1/4 tsp fennel seeds
1 pound ground Italian turkey sausage
2 tablespoon olive oil
Preheat 425F
Combine first 5 ingredients in large baking pan and coat. Season with salt and pepper. Bake potatoes for about 25 minutes .
Then add sausage, bake until potatoes are tender with crusty outside and sausage is fully cooked. about 30-35 minutes more.
