I used to make this dip at my restaurant it was one of my bestsellers!
Serves 2
1 pound of shrimp
1/2 stick of butter
3 tablespoon of olive oil
1 garlic clove
1 green onion, including tender green parts, finely chopped
salt and pepper, to taste
3 tablespoons all-purpose flour
shrimp bullion cube
1/2 cup half and half cream
1/3 cup heavy cream
1/2 teaspoon of red pepper flakes
1 tablespoon of clam juice
1/2 cup of mixture of Parmesan, Romano, and queso cheese
Handful cheese top over shrimp mixture.
Preheat oven to 425 F . Cut shrimp into pieces, over medium heat , melt 1 tablespoon of butter and olive oil add shrimp saute until heated through not all the way cooked ; about 2-3 minutes. Take shrimp out frying pan set aside.
In same frying pan over medium low heat melt remaining butter, add shrimp bullion. stir in the flour to make a roux and cook, stirring constantly, 2-3 minutes ;do not let the mixture color
Gradually add half and half, heavy cream and clam juice and cheese Cook stirring frequently, until thickened, about 7-10 minutes, Stir in salt, pepper, red pepper flakes. Taste and adjust the seasoning.
Stir shrimp into cheese mixture.
Pour shrimp mixture into a individual gratin dish. Sprinkle cheese on top. Place the dish on baking sheet and bake until bubbling and lightly browned , about 20 minutes. Let it cool for about 5 minutes , garnish with some whole shrimp. serve with corn chips or french bread.
