Smothered Lamb Chops with Peppers

Smothered jerk lamb chops – flavour infusion with a rosemary, thyme. DivineKuizine jerk rub/seasoning, garlic lamb chop marinade, sear aggressively to create a thick crust, then smothered in gravy. You will lick the plate clean.

One of our favorite meals my siblings and I loved by my mom. When we were growing up was her smothered pork chops, mash potatoes and a vegetable. Since I do not eat pork anymore. I wanted to still create that great nostalgic meal but with lamb chops. Smothered jerk lamb chops, mash potatoes and asparagus. These smothered jerk lamb chops were so delicious I have created a new family recipe .

Lamb Chop Recipe
Easy Smothered Jerk Lamb Chop Recipe


Serves 4


Ingredients:

1.5-2lb lamb chops

2-3 sprigs rosemary

2-3 sprigs thyme

LAMB CHOP MARINADE:

GRAVY:

  • 2 cups beef stock/broth

  • 3 tbsp flour

  • colored bell peppers

  • red onions

  • bullion cube

  • 2 tbsp butter

  • 1 garlic clove, minced

  • 1 tsp sweet chili sauce

  • season taste

Instructions:

  • Marinade: Mix Marinade ingredients together, leave to marinade for at least 1 hour, if you can.

COOKING:

  • Take lamb out of fridge 30 minutes prior to cooking (to bring to room temp).

  • Heat a large skillet over medium high heat, 1 tsp olive oil.

  • Pan fry lamb chops on each side to get a nice caramelized brown crust.

  • take out pan a set aside

GRAVY:

  • Add the garlic, stir for 30 seconds , to fragrant the pan.

  • Add in pan sliced peppers and onions . Cook while stirring occasionally, about 2 minutes.

  • Add flour to the pan. Mix the flour, butter and bullion cube into the pepper and onions cook to dissolve, about 2 minutes.

  • Pour in beef broth/ stock while stirring constantly to dissolve flour mixture in. If you have lumps, use a whisk.

  • Add thyme and rosemary sprigs

  • Add Lamb chops back to pan and let them finish cooking into the gravy.

  • Simmer, stirring regularly, for 2 - 3 minutes until it thickens in a gravy consistency.

SERVING:

  • Serve smothered lamb chops with creamy mash potatoes and asparagus.
