Super Easy Moist Lemon Raspberry Muffins

Delicious fluffy and moist Lemon Raspberry Muffins made with DivineKuizine Apple Fritter Mix fresh or frozen raspberries, of lemon, and a simple glaze on top. These muffins have a light lemony flavor that pairs very well with the sweet tartness of raspberries.They’re easy to make and freezer-friendly, too!

Muffins coffee or tea are great for breakfast or even for a breakfast on the go. Super kid friendly. These muffins are cloud-like soft, light like an angel food cake and studded with raspberries. A must make!

Makes 12 Muffins


Ingredients:

  • 2 Package DivineKuizine AppleFritter Mix (2 cups)

  • 11/2 cup sugar

  • 1 cup milk

  • 1/2 cup (liquid state)coconut oil (canola, vegetable or corn works too)

  • 2 large eggs

  • 1 tablespoon lemon juice + zest of 1 lemon

  • 1 and 1/2 cups (12 oz) fresh or frozen raspberries

Let Make These Muffins:

  • Mix Wet ingredients: Mix together lemon juice, milk, eggs, oil, lemon zest, in a n=mixing bowl.

  • Mix Dry Ingredients: DivineKuizine Apple Fritter Mix

  • Combine: Stir the wet ingredients into the apple fritter mix , stirring just until moistened. Fold in the raspberries.

  • Fill Muffin Tin: Line a muffin tin with paper liners, or grease it well with cooking spray. Fill muffin cups ¾ full.

  • Bake at 400 degrees F for 18-20 minutes or until a toothpick inserted in the center comes out clean or a few crumbs.



Glaze

Package of DivineKuizine Apple Fritter sugar glaze( will be in the apple fritter package

2-3 tablespoon lemon juice

Directions:

In a small bowl, whisk together the DivineKuizine apple fritter powdered sugar glaze and add 2 tablespoons lemon juice. (if you want the glaze even thinner, add an extra tablespoon of lemon juice). Allow the muffins to cool for a few minutes before drizzling with glaze.


Freezing Instructions:

Allow Muffins to cool completely, then freeze in a freezer-safe bag or container for up to 3 months. Thaw at room temperature, or warm in the microwave for a few seconds. Enjoy!
