Sweet Potato Black Bean Quinoa Bowl

An easy Sweet Potato Black Bean Quinoa Bowl drizzled with a zesty DivineKuizine Remoulade Sauce. This fresh vegetarian meal is filled with roasted sweet potatoes, black beans, and toasted quinoa, A delicious, meatless meal that will please everyone! This Bowl is full of protein, fiber, essential amino acids. So great tasting plus good for you. Cannot beat that! perfect quick dinner recipe!


Roasted Sweet Potato:

· 1 large sweet potato, peel and diced

· 1 tablespoon grapeseed oil

· 1/2 teaspoon chili powder

· 1/4 teaspoon cumin

· 1/4 teaspoon kosher salt

· 1/4 teaspoon smoke paprika

· 1 tablespoon DivineKuizine sugar spice

Black Beans

1 can of 8oz Black Bean

1/4 teaspoon chili

1/4 teaspoon cumin

1/4 teaspoon smoke Paprika

pinch of salt

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

fresh garlic clove, minced

Quinoa:

· 1 cup tri-color quinoa ( or whatever quinoa color you like)

· 1 cups water

· 1 chicken bouillon cube

· garlic clove minced

. tablespoon butter, optional

· Juice of half a lime

· 2 tablespoon cilantro, chopped

. DivineKuizine Remoulade Drizzle:


Roasted Sweet Potato:

· Preheat oven to 425 degrees then line a baking sheet with foil.

· Toss the diced sweet potato in the grapeseed and spices and lay it out in an even layer on the prepared baking sheet. Roast the sweet potato for 12-15 minutes or until it is fork tender.


Quinoa:

.Toast your Quinoa in your grapeseed oil, butter and garlic. Toast for 2 minutes. Add water and chicken bouillon cube. Bring the quinoa to a boil, then cover it with a lid and lower the heat to medium low. Cook the quinoa for about 15 minutes, until all of the liquid is absorbed.

Assembling the Bowls:

· In 2 or 3 serving bowls divide the quinoa mixture. Top the quinoa with the black beans and roasted sweet potato. Drizzle the DivineKuizine remoulade sauce on top with a spoon or squeeze bottle. Top with more cilantro if desired.
