Teriyaki Salmon Bowl

Heart healthy salmon in homemade teriyaki sauce and is served over jasmine rice with avocado slices and edamame. A few sprinkle of sesame seeds give it that extra punch of Asian flavor.






Serves 2

Ingredients

  • 2 cups jasmine rice

  • 2 salmon fillets, cut in to 1 inch chucks

  • 1 teaspoon grapeseed oil

  • 2 tbsp sesame seeds

  • 2 teaspoon rice vinegar

  • 4 spring onions

  • (5oz) edamame beans

  • Half a ripe avocado

Teriyaki sauce

  • 3 tbsp rice vinegar

  • 1 tablespoon DivineKuizine sugar spice

  • 1 teaspoon sesame oil

  • 1 teaspoon hot chili oil

  • 1 tsp soy sauce

  • 1 teaspoon rice vinegar

  • 1 tsp oyster sauce

  • 2 tablespoon of sweet chili sauce

  • 1 teaspoon garlic powder

Instructions

  1. Cook the jasmine rice according to the packet instructions and while it is cooking prepare When the rice is cooked, pour the rice vinegar over the top (while it is still hot) and then stir to coat the rice and fluff it up.

  2. Prepare the salmon fillets by removing the skin and chopping into chunks. Dice the spring onions into small chunks. Also prepare the teriyaki marinade by mixing all ingredients together in a small dish.

  3. Add the grapeseed oil and chunks of salmon to the pan cook until slight brown. pour in teriyaki sauce over the salmon and is fully coated in the glaze Continue to cook on a medium low heat cover for couple of minutes, stirring occasionally, until the salmon is beautifully glazed and cooked to your preferred level. Remove from the pan and scoop the teriyaki salmon and spring onions onto the jasmine rice bowls.

  4. Once the rice has cooled, and is now warm rather than hot, you can assemble the base for the bowls. Split the rice between two wide bowls so that two-thirds of each base is covered. In the remaining third, pile edamame beans and sliced avocado. Serve with extra teriyaki sauce on the side if you wish.
