This One-Pot Tomato Basil Chicken With Orzo is loaded with flavor. A quick and easy dinner that everyone will love. With tender orzo, sweet tomatoes, flavorful garlic and Parmesan, chicken and fresh basil. A new weeknight staple! Orzo is a small flat oval-shaped pasta that takes very little time to cook. This is a fast and easy way to get a delicious dinner on the table.
Marinate-Chicken
4-6 boneless skinless chicken breast
1 tablespoons olive oil, salt , pepper, smoke paprika, garlic powder, onion powder and cayenne pepper
Ingredients:
1 can stewed tomatoes
1 can tomatoes sauce
3 tablespoon olive oil
2 garlic cloves, minced
3 tablespoon yellow or red onion chopped
3 tablespoon red pepper, chopped
3 tablespoon celery, chopped
1 chopped jalapeno, chopped
3 tablespoon green, chopped
2 tablespoon fresh chopped oregano
1/4 cup fresh chopped basil
1/2 fresh lime juice
1/2 cup chicken stock/broth
3 Roma tomatoes, chopped
2 tablespoon butter
salt and pepper to taste
1 teaspoon sugar
freshly grated Parmesan cheese
2 cups dried orzo pasta- make pasta as directed on box
Directions:
Cover the chicken with plastic wrap and pound each piece to an even thickness, about one inch or so in the thickest parts ( this just helps it cook faster and more evenly).
Remove from plastic. Marinated the chicken 1 tablespoons olive oil, salt , pepper, smoke paprika, garlic powder, onion powder and cayenne pepper. Refrigerator 1 hour or overnight.
Heat the olive oil in large heavy skillet. Add the chicken and pan-fry for several minutes on each side (7-10 minutes). to get brown on each side and almost cooked, set aside.
Stir in garlic and vegetables in the pan saute, for a few minutes.
Place chicken back in the pan. Add stewed tomato, tomato sauce, chicken stock, fresh oregano, fresh basil, butter, handful of fresh tomatoes, salt and pepper. Let sauce simmer for about 20 minutes. Add lime juice let sauce simmer for about 2 more minutes and serve.
Plating:
Plate pasta ant top chicken and tomato basil sauce. Garnish with fresh tomatoes, fresh basil and freshly grated Parmesan cheese.
