While going through this food journey. I am learning how to bake. Baking is not one of my strong points, but I know PRACTICE MAKES PERFECT! I admire the craft of baking all the sweet and pretty things you can make. I wanted to make something fun and creative for Valentine Day so I decided to make cupcakes. Cupcakes are always a fun treat. I made vanilla cupcake with meringue frosting.
Makes 16 cupcakes
1 stick butter, at room temperature
1 cup of white sugar
2 eggs, at room temperature
1 1/2 cup of sifted flour
1/4 teaspoon salt
1 1/2 teaspoon baking powder
1/2 cup of plus 1 tablespoon of whole milk
1 teaspoon vanilla extract
1/2 squeeze fresh lemon on juice
Preheat 375F
Fill muffin tin with paper baking liners. With electric mixer, cream the butter and sugar until light and fluffy. Add eggs at a time, beating well after each addition. Sift together the flour, salt and baking powder. Stir into the butter mixture, alternating with milk. Stir in vanilla and lemon juice.
Fill the cups half -full and bake until the tops spring back when touch lightly, or about 20 minutes. Let cupcakes stand in the pan for 5 minutes, then transfer to a rack to cool completely.
Frosting:
2 large eggs whites
3 1/2
cups of sifted confectioner sugar
1 tablespoon of corn syrup
Juice of 1 lemon
Food coloring ( I used red , yellow, blue)
Colored sprinkles and any other decorations you would like to use
